Alfredo
Sauce
Ingredients:
3 tablespoons butter
2 tablespoons of olive oil
2 garlic cloves, minced
2 cups heavy cream
¼ teaspoon white pepper
¾ cup shredded by hand Parmesan
cheese or shaved Parmesan cheese.
¼ cup Parmigiano Reggiano
3/4 cup of Mozzarella
Directions:
Melt butter in sauce pan with olive
oil over medium / low heat. Add garlic,
cream, white pepper and bring mixture to a simmer. Stir often.
Add Parmesan cheese slowly while
stirring, then add Parmigiano Reggiano cheese slowly while stirring. Simmer for
8-10 minutes or until cheese sauce is smooth and thickened.
Then add Mozzarella slowly and stir
until smooth. STIR FREQUENTLY.
Tri Tip Marinade
Ingredients:
2 Large Tri Tips
3 Cups of firmly packed brown sugar
3/4 Cup of Worcestershire Sauce
1/4 Cup of Ketchup
1 tsp of Tapatio Hot Sauce or similar brand
1 tsp of garlic powder
Directions
1) Mix all ingredients together in a bowl.
2) Put each Tri Tip in a separate zip lock bag with half the marinade in each bag. Refrigerate for 24 hours, then freeze, or cook and serve tri-tip that day.
Barbecue Sauce
Ingredients:
1-1/2 cups ketchup
3/4 cup packed brown sugar
1/2 cup white vinegar
1/2 cup honey
1/3 cup soy sauce
1-1/2 teaspoons ground ginger
1 teaspoon salt
3/4 teaspoon ground mustard
1/2 teaspoon garlic
1/4 teaspoon pepper
Directions:
Mix all ingredients together in a bowl.
New York Steak Marinade
Ingredients:
4 Steaks
1/2 Cup of Olive Oil
1/2 cup Worcestershire Sauce
1/4 Cup Minced Garlic Cloves
1/4 Cup Steak Seasoning
1 Tbsp Red Wine Vinegar
1 Tsp Dried Basil
Directions:
Mix ingredients together and soak steaks for a maximum of 30 minutes.
Taco Sauce
Ingredients:
1 (8 ounce) can tomato sauce
1/3 cup water
1/4 teaspoon chili powder
1-1/2 teaspoons cumin
1-1/2 teaspoons instant minced onion
1 tablespoon white vinegar
1/2 teaspoon garlic powder
1/2 teaspoon garlic salt
1/4 teaspoon paprika
1/4 teaspoon sugar
1/4 teaspoon cayenne pepper
Directions:
1. Mix together and stir well all ingredients and place into sauce pan. simmer at a very low temperature for 15-20 minutes.
2. Remove from heat and cool.
3. Refrigerate when storing.
El Pollo Loco Cilantro Dressing Copycat Recipe
Ingredients:
1 bunch cilantro, chopped
1 cup mayonnaise
1tsp. cumin
2 1/2 tbsp. lime juice
2 tbsp. minced garlic
1 tsp. sugar
1/2 tsp. onion powder
1 jalapeno, seeds removed and chopped
salt and black pepper to taste
whole milk, to thin (optional)
Directions:
1. Into a high-speed blender or food processor, add cilantro, mayonnaise, cumin, lime juice, garlic, sugar, onion powder, jalapeno, salt, and black pepper. Blend until smooth. You can add milk (1 tablespoon at a time) if you want to thin out the dressing. Blend until it reaches your preferred consistency.
2. Pour the dressing into an airtight container and refrigerate until ready to use. The flavors will actually improve overnight.
